Nohpalli = no pal-li    cactus, nopal 
 Nopalli with Tomatoes and Onions
INGREDIENTS
· 1 lb nopalitos, nopales prickly pear cactus paddles that have been stripped of spines, cleaned, and chopped
· Olive oil
· 2-6 large cloves garlic, minced
· 1/2 red onion, roughly chopped
· 1- 6 jalapeño pepper, chopped , remove stem
· 1 medium tomato, roughly chopped or diced can tomatoes
· Salt

Heat a tablespoon of olive oil (enough to coat the bottom of the pan) in a large sauté pan on medium high heat. Add red onion, garlic, and jalapeño. Cook for a minute, stirring occasionally, then add the nopalitos. Cook for several more minutes. Then add the chopped tomato. Continue to cook until all vegetables are cooked through. Season with salt. Enjoy !

Huautli
amaranth-for-breakfast :

INGREDIENTS:
huautli
shredded coconut
Cinnamon
agave
cacao beans

1. Mix the water and huautli/amaranth in a saucepan and heat 
    to boiling.
2 Turn heat to low, and let simmer for 20-25 minute Most of 
   the water should be absorbed.
3. Then add 1/4 tsp Cinnamon,2 tbsp agave, 1/4 cap shredded
 coconut, 1/4 cup cacahuatl (cacao beans) and stir into huautli while hot. 



Camohtli       Yams         Camotes

INGREDIENTS:
nastursium flowers
Camohtli / yams  4 mediums 
cloves 1Tsp
Canela 3 Tsp
nutmeg  1/2Tsp
coconut oil  4 Tsp
nasturtium flowers with leaves  5
kiwi 1
cut  Camohtli 1/2in thick, Steam Camohtli 15 minutes, let simmer 15 min, add cloves, Canela, nutmeg, coconut oil and mix, then top with nasturtium flowers and kiwi

Homemade Xocolatl Ala Xely


Pealed CacaoKeep tasting to make sure it's as you like. :)mmm
Step 1: roast beans for no longer than a minute to maintain it's raw goodness. This helps the skin peel off other wise you may want to soak in water until the skin can be pealed. But then you miss out on the lovely aroma they release when lightly roasted. 


Step 3: crush beans into either a fine powder or as I like 1/2 n 1/2. Powder and nibs to chew on (helps keep teeth shiny). You may use a coffee grinder if you don't have a molcajete-my mama gave it to me and my comal.


Step 4: add to dry crushed cacao

Step 6: Optional

roll your little xocolatl ball in crushed raw cashew nuts.
NEW MIX: brazilian nuts and rolled oats to roll'm in after so good!


INGREDIENTS:
I TBSP of coconut oil,
6 TBSP of raw almond butter or peanut butter
6 TBSP of agave
1/8 tsp of salt( sea salt) not over filled
1/4 tsp of cinnamon 
a pinch of cayenne 
a pinch of L-O-V-E a big one ♥
MIX with a wooden spoon

optional: you may add mo-agave or extracts to flavor your xocolatl, or anything else to enhance the 

experience ;)


Quinoa


Place quinoa and water in a 1-½ quart saucepan and bring to a boil. Reduce to a simmer, cover and cook until all the water is absorbed (about 15 minutes).

You will know that the quinoa is done when all the grains have turned from white to transparent, and the spiral-like germ has separated. Makes 3 cups.




 use  tomato puree Season with salt and cook over medium-low heat until the tomato mixture turns a deeper red color and no longer tastes raw, perhaps 10 to 15 minutes.
Ingredients
1 tablespoon oil
3 slices of onion, about 1/4-inch thick
1 cup quinoa
1 3/4 cups water
1 210-gram box of tomato puree (or a small can of tomato sauce, if you live in the States)
salt
Heat your oil in a heavy-bottomed saucepan and, when hot, add onion and quinoa. Stir constantly (this will burn if you leave it too long), until quinoa starts to brown and releases a pleasant, toasty smell. Add water and tomato sauce and stir. But be careful, because the pan might hiss and spit. Add salt to taste. Bring to boil, and then lower heat to simmer. Cook for 30 minutes (this is how long it took me in Mexico), or perhaps half that if you’re at normal altitude. Feel free to check on the quinoa as it cooks. It won’t hurt the dish.
The quinoa may look wet when it’s done cooking, but it solidifies a bit as it cools. If you find it too wet for your taste, cook with the lid off and let some of the liquid evaporate.

 How to Use Chia Seeds to Replace Eggs





  • 1  Grind 2 tsp. of chia seed using a coffee grinder or spice grinder.





  • 2  Add the ground chia seed into a bowl with 1/4 cup of water. Allow the mixture to stand for 5 minutes or until it becomes thick.





  • 3   Add this chia and water mixture as an equivalent of one large egg, for use in recipes calling for eggs as a binder,  in baked items including cookies, bread and muffins. This mixture also works as an egg substitute 




  • Spirulina:
    For making a good energy drink, you can add 1 tsp of spirulina to the lemon juice and drink it straight away after stirring it well. Believe me, it’s a great energy drink for all age-groups. Intake of spirulina on regular basis increases the anti-viral activity of your body. It stimulates your immunity system in a greater way. Not only this, but spirulina reduces your kidney toxicity and improves wound healing in a much faster way than anything else. You will be glad to read regular intake of spirulina also reduces radiation sickness too.
